What the module does
Real cost, not an estimate
Every dish has a recipe with gram weights. When it sells on the POS, the real quantity leaves stock, so the cost is exact, not an estimate.
Margin follows prices
When purchase prices rise or fall, the margin of every dish updates on its own, without waiting for month end.
Which dish carries, which drags
Margin by category and per dish. You see at once which dishes hold your profit and which are time to rework or cut.
Removal suggestion
Dishes that sell poorly while running a high food cost are flagged automatically, twice a month, as a list to review with the kitchen.

Avocado, salmon and berries change price often. Patrono tracks cost per portion, so each week you know which dishes still earn.

Events have different recipes than the regular menu. Patrono runs both separately and measures event profit on its own.

How does Patrono calculate food cost?
Food cost is calculated from real ingredient consumption defined in the recipe, not from estimates. For each portion sold, the exact quantity of each ingredient is deducted from stock. Supplier prices flow in through invoices, so the margin on every dish stays accurate even when the price of flour jumps on Saturday and you only learn about it on Monday.
Do I have to sign a yearly contract?
No. The monthly option has no commitment. You cancel any time with full data export in machine-readable format. The annual option is a choice if you want a fixed cost, two months free versus paying monthly, not a forced condition.
