Every dish has a recipe, ingredient cost and margin. When a supplier raises a price, the whole menu recalculates immediately. You see exactly where margin is leaking before the next P&L makes it an emergency.

What the module does

Recipes per dish

Every dish has an ingredient list with exact gram weights. When a dish is sold on the POS, the real quantity of each ingredient is automatically deducted from stock. No estimates, no weekly inventory restart.

Price change, new food cost

Did the price of flour jump on Monday morning? By the first order, every dish using flour already shows an updated margin. You do not wait a month to discover what happened to profitability.

Per category and per dish

Cold kitchen runs 22% food cost, hot 28%, desserts 18%. Inside each category you see which dishes hold their margin and which need a price correction or removal.

Removal suggestion

A dish that barely sells while running over 40% food cost does not belong on the menu. Patrono flags these automatically; twice a month you get a list to review with the chef.

Avocado, salmon and berries live in their own price bubble. Patrono tracks every per-portion cost while the market swings, and reprices margins on a weekly basis.

Restaurant with catering

Events have different recipes than the regular menu. Patrono runs both in parallel and measures event profitability separately from regular operations.

Multi-venue network

Two locations of the same chain with the same menu can have a 4-percentage-point difference in food cost. Patrono shows why: one location has better sourcing, the other leaks during shifts.

How does Patrono calculate food cost?

Food cost is calculated from real ingredient consumption defined in the recipe, not from estimates. For each portion sold, the exact quantity of each ingredient is deducted from stock. Supplier prices flow in through invoices, so the margin on every dish stays accurate even when the price of flour jumps on Saturday and you only learn about it on Monday.

Do I have to sign a yearly contract?

No. The monthly option has no commitment. You cancel any time with full data export in machine-readable format. The annual option is a choice if you want a fixed cost with a discount, not a forced condition.
